Rustic Yellow Plum Skillet Cake
Jammy fruit, crisp golden edges, and a simple batter that lets ripe summer plums do the talking.

Plum season arrives all at once. This unfussy cake is our answer to a basket of ripe fruit: tender in the middle, crisp around the skillet, and just sweet enough.
It is lovely on its own and even better with a spoonful of softly whipped cream. The cake keeps well, covered, for a day or two.

Prepare the skillet
Heat the oven to 350°F. Butter a 10-inch oven-safe skillet, including the sides.

Mix the batter
Beat the butter and 3/4 cup sugar until pale and fluffy. Beat in the eggs one at a time, then add the vanilla. In a separate bowl, whisk the flour, baking powder, and salt.

Bring it together
Add half the dry ingredients to the butter mixture, followed by the milk, then the remaining dry ingredients. Mix only until no flour streaks remain.

Add the plums
Spread the batter in the skillet. Nestle the plum halves into the top, cut sides up, and sprinkle with the remaining tablespoon of sugar.

Bake and cool
Bake for 40 to 45 minutes, until the top is golden and a tester inserted into the cake comes out clean. Cool in the skillet for at least 20 minutes before serving.
